Preheat oven to 300 degrees. Recipe makes about 1 dozen muffins.
Ingredients:
- 1 cup flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 4 tablespoons (1/2 stick) melted butter
- 1/3 cup buttermilk (sub regular milk and add 2 drops lemon juice, stir)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 ripe banana
- 3/4 cup chocolate chips
Recipe:
- sift all dry ingredients together (flour, sugars, cinnamon, ginger, baking powder and soda, and salt)
- Add melted butter, buttermilk, egg and extracts. Beat for 1 minute
- mix in ripe banana
- fold in chocolate chips
Bake at 300 degrees for about 30 minutes
Check for doneness with toothpick
